You currenty can't there is a request to do this...

A empty course effectivally takes up little to no HD space, and
basically gets ignored, if you really really deperatley need to delte
a course that will never affect you once you have deleted the roles I
could suggest a method. But it's not something we really want to make
easy for people to do.

Just delete the roles and forget about it.
