Currently, your only option is to have a test machine that really isn't
networked which has a copy of the entire res space from your server. I
played around with the custom role and there isn't a way to allow
someone to just browse the entire resource space. In the past, I have
created new courses and course coordinators on our server for training.
However, I do always check that the person is a legitmate instructor
here at MSU.

Not now, feel free to make a bug report. Feel free to vote or comment
on http://bugs.lon-capa.org/show_bug.cgi?id=2011 which is somewhat related.

If the person you are trying to "sell" to is an instructor at SFU, I
don't see anything wrong given that person an author account. I would
tell them to create a subdirector called Workspace and then do all their
playing around in there. You can continue your Workspace demo by having
the new author edit the Directory Catalog Information for Workspace and
show them how to publish as private for example.
