Yes, the time stamp can be removed.

Go to the main menu - select "Modify parameter settings".   There is an option under
"Settings for the Course" that says "Reset Student Access Times".

Follow your nose. You can remove a time stamp for a particular student for a particular
quiz, or you can remove a time stamp for a quiz for everyone.
