LON-CAPA had an accessibility review, which may list tools: http://www.lon-capa.org/reports/Accessibility.pdf . This is, however, somewhat outdated by now, since we fixed many of these issues.

We had at least two blind users of LON-CAPA by now, but I would not know if that is the total number. Seems like they used JAWS, http://en.wikipedia.org/wiki/JAWS_(screen_reader) .
